Trader Joe's Dinner: Orange Chxn

This is such an easy and yummy dinner. I got a gift card for my birthday to Trader Joe's and I got some really cheap and VEGAN foods for a super fast dinner.
SO first off, my actual favorite part of this meal was the scallion pancakes. They are so crispy and rich. I did splash my face with some hot oil trying to flip it, but if you're not stupid like me you should be fine.
They have these in the freezer aisle and it comes with maybe 5 of them. They're frozen dough basically and you just add 'em to a pan with oil.
They're basically like a tortilla or a flatbread but with more flaky layers. I topped mine while it was still oily and hot with some garlic salt and blat pepper, which made it even better. Just follow the cooking directions on the bag and you'll be fine.
I think next time I might make a little garlic sesame soy sauce dipping concoction for the next time I eat these.

Next, was their orange chicken bites. "chickenless bite" as they actually label it. and it was. I shit you not. I think $3.50. For two servings of vegan orange chicken. Insanity.

So I fried my little bits in the rest of my oil from the pancake, and then added the sauce, and i wish I left it in the pan a bit longer for the sauce to thicken up, because the package said REMOVE IMMEDIATELY AFTER ADDING SAUCE!!!!!! and I took it a little too literally lol so mine just kinda soaked my chicken and it wasn't crispy anymore. But if I left it in, the sugary sauce would have caramelized more and would have been better. It was still good though.
I also added some really spicy dried red chilis. Two was more than enough for me.
You could totally add some pineapple and bell peppers, maybe some sriracha to the sauce, and make this a sweet and sour chicken dish too!
Lowkey I bet you could just use these as tiny chicken nuggets too. lmao. just don't use the sauce it gives you, save it for another meal, and eat em with ketchup or whatever.
Lastly, I vegg'd it up a bit and took some of my frozen green beans with some onions, garlic, salt pepper smoked paprika, garlic powder, onion powder, and soy sauce.

Plated the green beans, with the chicken on top. Pancake on the side. Added some HOME GROWN green onions that Angel grew for me from some stubs we got at the grocery store! Reduce reuse recycle. :)
I also added some sesame seeds and prob would have added sriracha but we were out.
And that's it!!! Just the pancake, the chicken, and some optional veggies.

Yum! Such a good dinner. Took maybe 15 minutes.
Honestly, I couldn't finish it all because I just made the whole package, so I just put the food away and ate the rest the next day!
