Chili Out, bitch.

I hope the punny title isn’t so stupid that you don’t want to make this recipe. Because it’s much better than any store-bought vegan chili.

So this includes making fresh tortilla chips with it, but feel free to make french fries, hot dogs, cornbread, mac & cheese, etc. Whatever chili craving you’re having! I don’t have a month-long story to scroll through to find the actual recipe, it’s just right here. Just look below. :D

Ingredients:

  1. Impossible Meat

  2. Butter & oil

  3. Vegetable Broth

  4. Diced tomatoes can

  5. Beans (black or kidney)

  6. Tomato paste

  7. Corn starch

  8. Green pepper

  9. Onion

  10. Garlic

  11. Brown mushrooms

  12. Tomatoes

  13. Salt, pepper, cumin, garlic powder, onion powder, chili powder, or cayenne

  14. Pickled jalapeños

  15. Corn tortillas

  16. Cheese, sour cream, and diced white onion for serving (vegan alt)


Directions:

  • Start with oil and butter in the pot. Add onion and peppers to the pot and cook until halfway soft. Then add garlic and finely chopped brown mushrooms.

  • Then add tomato paste and corn starch.

  • Next, add your fresh tomatoes, and chopped pickled jalapeños—Cook for 1 minute.

  • Then add the can of diced tomatoes, beans, and vegetable broth.

  • Mix in your spices.

  • In a separate pan, add a tbsp of oil and garlic. Cook the impossible meat separately in this pan. Add the same spices from the soup base. Add chili powder.

  • When the impossible meat is done, turn the stove off, remove from heat, and set it to the side.

  • Heat another deeper pan and add oil until about a fourth of the pan is filled. Fry your tortilla, and cut into fourths to make fresh tortilla chips.

  • When your chips are finished, sprinkle a small amount of salt.

  • Stir in the impossible meat to the chili.

  • Serve with chips, raw onion, shredded cheese, and sour cream. Optional: Green onions, avocado, cilantro, jalapeños, etc.
